Description
Stainless Damascus steel blade blank designed for making your own knife.
The construction combines a hard cutting core made of martensitic stainless steel with a higher carbon and chromium content for good edge retention, with outer layers of tougher stainless steel that contribute to the blade's strength and durability.
The blade core is hardened to 60–61 HRC, providing a balanced combination of long edge life and good resistance to damage during normal use.
The blade is ready for fitting a handle and final sharpening, with no further machining required. It provides an ideal foundation for building a Japanese-style kitchen knife with an attractive Damascus pattern.
Japanese kitchen knives are highly regarded for their blade geometry, which allows precise, clean cuts with very little cutting resistance. The Kiritsuke is a traditional Japanese knife with a long, straight blade and a distinctive angled tip. In Japanese cuisine, it is traditionally regarded as a knife for experienced chefs because it combines the characteristics of the Yanagiba and Usuba knives. In everyday use, it is a versatile chef's knife suitable for slicing meat, fish and vegetables. Its long, straight cutting edge provides clean cuts and excellent control during use.
