Stainless Damascus steel blade blank designed for making your own knife.
The design combines a hard cutting core of martensitic stainless steel with a higher carbon and chromium content, which ensures good blade durability, with outer layers of tougher stainless steel contributing to the strength and durability of the blade.
The blade core is hardened to a hardness of 56-57 HRC, which represents a balanced ratio between long blade life and good resistance to damage during normal use.
The blade is ready for handle attachment and final sharpening, without the need for further modifications. An ideal basis for making a Japanese-style kitchen knife with an attractive Damascus pattern.
Japanese chef's knives are valued primarily for their blade geometry, which allows for precise and clean cuts with minimal material resistance. Kiritsuke is one of the traditional Japanese knives with a long straight blade and a typical beveled tip. In professional Japanese cuisine, it was historically considered a knife for experienced chefs, as it combines the properties of Yanagiba and Usuba knives. In practice, it is a universal chef's knife suitable for precise cutting of meat, fish, vegetables and fine portioning. Thanks to the longer straight part of the blade, it allows for very clean cuts and precise control during work.
